The Liège waffle originated in the city of Liège in eastern Belgium. These waffles are immensely popular in all of northern Europe and street vendors can be found selling them in most cities. According to legend, the Liège waffle (from the city of Liege, in eastern Belgium) was invented by a cook of the Prince- Bishop of Liege in the 18th century. The Prince-Bishop had asked for a pastry filled with big pieces of pearl sugar. The cook baked a brioche type pastry with pearl sugar and vanilla blended in the dough in a cast iron waffle iron. During baking, the smell of the vanilla delighted the Prince and this waffle recipe quickly became one of the culinary traditions in Liège and took the Belgium kingdom by storm. Unlike the Americanized “Belgian waffles” that are made from pancake batter, Bel Frites’ Liège waffles are made from a yeast-based dough containing imported Belgian pearled sugar, which caramelizes throughout the waffle due to its high melting point.
